Larkmead's Cabernet Sauvignon Dr. Olmo is comprised of older vines planted wholly on Cortina. This wine has a classic, fresh style, an elevated aroma profile and a medium body with great structure.e, full-bodied, majestic, yet structured wines that are going to age beautifully. Dr. Olmo is an incredibly versatile bottling, both in the glass today and in the cellar where it has the potential to age for three decades or more. When drinking upon release, decant for 30 minutes to an hour to bring the wine’s secondary and tertiary characteristics into play.
