Winery Notes: This is the our first release of a red wine from Atavus. As with the white wine above we omit reference to the grape variety as genetic mutation under environmental forces mean that this wine is far more expressive of place than of a narrow conception of grape. The whole clusters were placed in open top conical vats and left untouched for a week. After the fermentation begins to reach a peak of activity we begin to gently tread the grapes by foot. Total maceration on the skins lasted about three weeks before the wine was pressed directly to older Burgundy casks where it aged for 22 months before bottling by gravity. This is astonishingly rich and layered for its 12.5% alcohol, with flavors of tart cherries, five-spice and incense.
