This Mencia came to life from Rajat's friendship with the owners of Envinate, one of the top wineries in Spain. The vines were grafted with cuttings from their iconic Camino Novo vineyard in Ribeira Sacra. This wine shows the power of Mencia, but also the salinity and balance that can come from hard work in the vineyard. Whole cluster fermentation, twelve-day maceration in stainless steel tanks, elevage in neutral oak, no filtration or fining.
