Philippe is the nephew of Marcel Lapierre, a legendary natural winemaker in Beaujolais. Philippe worked with his uncle, the late Marcel Lapierre, in Morgon, and later at the highly regarded Domaine Prieuré-Roch in Côte de Nuits before setting up his own prestigious négociant business.
Although he owns no vineyards himself (a concept which allows him to stay nimble and flexible in his business) Philippe handles everything in the vineyards from pruning to bottling. His philosophy is that nature shall govern the production and not new technology. He uses whole bunch fermentation for reds and whites, pressing carefully so as not to break the stems.
Philippe does not use chemical fertilizers or sprays in the vineyards and uses the natural yeast. However, sulphur is used to a limited extent to stabilize the fermented wines. The wines produced are unique for each year. Each soil and cultivation, terroir, is evident in the finished wines. This mixed box is an incredible introduction to the wines of Philippe Pacalet.
Chenas 2016: Red and dark currant flavours, with classic pepper and earth scents. The rich, full-bodied and powerful flavours coat the palate and possess excellent complexity on the very serious, firm and detailed finish.
Ladoix 2017: This is bright and fresh, with loads of red fruit, fine and well-integrated tannins and beautiful, cleansing acidity.
Pommard 2017: Attractive spiced notes wrap around the expressive finish. This is a delicate style of Pommard that impresses for its length and subtle personality.
Gevrey Chambertin 2015: Bright medium red. Musky aromas of raspberry, cherry, rose petal and peppery herbs, with some sexy high tones. Shows lovely juicy cut and energy owing to its herbal, spicy and floral elements. Nothing heavy here! Finishes with utterly seamless, fine-grained tannins.
Nuits-st-Georges 2014: This has a more deeply pitched but still quite pretty nose which offers up both red and dark berry scents that are trimmed in wisps of earth, spice and floral nuances. The tight, compact and intense medium-bodied flavors possess excellent underlying tension while displaying a taut muscularity on the moderately austere and solidly persistent finish.
Vosne-Romance 1er Cru les Chaumes 2016: An intensely spicy nose features aromas of ripe dark berries, warm earth, sandalwood and cinnamon. There is excellent depth to the solidly well-concentrated, firm and vibrant medium-bodied flavors that are shaped by mature tannins on the gorgeously long finish. There is a seductive quality to the palate impression and this is very Vosne in basic character.
