Varnier-Fanniere's newest cuvee, Esprit de Craig is from two of the most chalky parcels of vineyard in the Cote des Blancs. The soil of the Côte des Blancs consists of a thin layer of topsoil covering the chalk underneath, which in places reaches depths of 10 meters. This chalk, called Belemnite, is composed of marine fossils. The roots of their chardonnay vines have to penetrate very deeply into the soil to draw water and minerals which are indispensable for their survival. This relatively poor soil produces wines with a magnificent mineral structure. The dosage ‘Extra Brut’ (6 g/L) makes it an ideal aperitif wine,with beautiful notes of citrus, green apple and brioche, and always a lovely mineral finish.
