Xarel-lo is normally used as a main component of high quality Cava, but the Gramona family have been making different styles of still wine with Xarel-lo for some years now. From an organic and biodynamic estate vineyard, this wine is harvested by hand and selected on a sorting table. The grapes are cooled to 0-5°C in order to carry out a maceration during 14 hours. Fermentation takes place in 3000 litre French oak barrels (fine grain and medium toast). The wine’s fruit comes through in the form of pear, apple, pink pomelos, and wild strawberry aromas. Mediterranean woodland herbs such as thyme, fennel and laurel. A floral hint of broom. The wine has a very spicy personality, reminiscent of Sichuan peppercorns and a pronounced mineral character. This is really good.
